青梅採收後，經100天的醃漬，接著在大太陽底下曝曬15天，並不斷以人工翻動，使其均勻接受日光能量，並抖落多餘的鹽份，經研磨、過篩、烘乾等繁瑣步驟，濃縮梅子天然原味。
